Cannabis Infused Chocolate Chip Banana Bread

A gluten-free and naturally sweetened recipe for a classic fan favourite - chocolate chip banana bread, with a twist of infused cannabis olive oil. Moist banana bread with sweet decadent chocolate chips.

INGREDIENTS (+sUBSTITUTIONS)

  • Rolled Oats: My favourite oats to bake with are rolled oats because they give a lovely chewy texture that creates alot more depth to my baked goodies. Recommend going for gluten-free oats if you can!

  • Eggs: Substitute for flax egg is you are vegan.

  • Bananas: Make sure that you use super ripe bananas! The more ripe the banana, the sweeter and more moist your banana bread will be.

  • Maple Syrup: Feel free to substitute maple syrup for another liquid sweetener like raw honey — although it might change the taste of the banana bread a little bit!

  • Cannabis Infused Olive Oil: If you don’t have infused olive oil, use infused coconut oil or MCT oil.

  • Olive Oil: I always like to balance out my infused recipes with partial regular olive oil just to make sure that you don’t overpower the baked good with the herby taste of cannabis.

  • Vanilla Extract: This is a key ingredient! It’ll help mask some of that herbaceous cannabis odour.

  • Stevia Sweetened Chocolate Chips: I love stevia chocolate chips because theres 0g of sugar and it won’t spike your blood sugar. Great option for people trying to watch their glucose levels.


TIPS & TRICKS FOR SUCCESS

  1. The reason why I used a blender is because it makes the banana bread less grainy and more like a muffin texture. if you don’t have access to a large blender, try using oat flour instead or you can just mix all the ingredients together by hand.

  2. Save some chocolate chips for adding to the top of the banana bread batter after pouring it into the loaf. This will give it the visual appeal that you see in my photo!

A gluten-free and naturally sweetened recipe for a classic fan favourite - chocolate chip banana bread, with a twist of infused cannabis olive oil. Moist banana bread with sweet decadent chocolate chips.

Ingredients

  • 2.5 cups gluten-free rolled oats
  • 2 eggs
  • 3 ripe bananas
  • 1/3 cup maple syrup
  • 1/4 cup cannabis infused olive oil
  • 1/4 cup olive oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup stevia sweetened chocolate chips

Instructions

  1. Preheat the oven to 350F.
  2. Combine all the wet ingredients together in a blender.
  3. Add the dry ingredients except for the chocolate chips and blend until the batter turns into a medium thick consistency.
  4. Line a loaf pan with parchment paper.
  5. Pour the batter into the loaf pan and top the batter with extra chocolate chips.
  6. Bake for 40-45 minutes. To check whether the loaf is done, stick a toothpick into the center of the loaf to see if there is any liquid on the toothpick when you pull it out.
  7. Allow to cool for 10-15 minutes before cutting.
  8. Store in a glass container for up to 3 days, or place in the fridge for up to 1 week.
