How to Make Weed Brownies with Cannabutter

HOW DO YOU MAKE cANNABUTTER?
Cannabutter, also known as cannabis butter, is one of the most versatile cannabis infusions I have in my refrigerator at all times. This cannabis infused ingredient can be used for baking sweet edibles, or even using in savoury and salty dishes. If you are vegan or are lactose or dairy free, you can always make vegan butter instead.
There are many ways that you can make cannabutter nowadays. Traditionally, home infusion enthusiasts made cannabis butter with their oven, stove, or crockpots simply by decarbing dried cannabis and then infusing it into butter. This process generally takes a couple hours. It’s a simple process, but it can leave an odour in your home and can be a bit messy. These days, there are many high-tech (no pun intended) cannabis infusion devices in the market that simplify the cannabis decarbing and infusion process, have virtually no odour, and are very easy to clean.
I personally use the Ardent Fx and LEVO II infusion machine. Both devices have capabilities to decarboxylate cannabis (which converts THCA and CBDA to THC and CBD, the psychoactive compounds of cannabis), and infuse the dried flower into an oil, butter, or carrier of your choice.

HOW TO MAKE PERFECT FUDGY BROWNIES
I’ve made so many batches of brownies and oddly enough, they always come out slightly different even if I’m using the same recipe! It might have something to do with how I mix the brownies and the different ovens I’ve had over the years. However, I find that the best way to have consistently fudgy brownies is to avoid over-mixing the batter, add in a lot of small-medium sized chocolate chips/chunks to the batter, and always bake them underdone.
I do want to call out that everyone defines “fudgy” differently. Personally I like fudgy and slightly ooey-gooey brownies, but not the ones that overly gooey where it sticks to every tooth in your mouth. I like my brownies in between dense and gooey — if that makes sense? A nice texture with the initial bite, followed by bites of the soft, fudgy centre.
Step One: Avoid over-mixing your brownie batter
When making brownies, I always use a spatula to gently fold the ingredients together. This will prevent your brownie from coming out with a cakey texture and help maintain that fudgy ooey-gooey-ness.
Step Two: Add a lot of chocolate chips/chunks to the batter
Not all brownie recipes have pieces of chocolate in them but I personally love adding it for extra texture and melted chocolate goodness. I recommend using chopped up chocolate or small-medium sized chocolate chips and adding it to the batter. When your brownies are finished baking, the chocolate chunks will be melted which will enhance the ooey-gooey texture of the brownie.
Step Three: Always slightly underbake your brownies
All the brownie recipes you find online are slightly different and they’ll always call for different baking times. Whatever recipe you’re using (or mine in this case), I recommend checking on the brownies when you’re at about 80-90% of the recommended total baking time. What you’ll want to do is stick a toothpick into the centre of the brownie and pull it out, and see whether the brownie batter on the toothpick is to your liking. If you see that it’s very wet, you probably ned to cook your brownies for a little bit longer. If you see that its gooey but not wet, I would recommend taking it out of the oven. If you see no batter and it’s completely cakey, you’ve overbaked your brownies unfortunately.
I find the different stoves bake differently, even if you’re using a standard temperature. This is what makes baking so difficult in my opinion! As an example, if my recipe calls for 25 minutes, I recommend checking your brownies at the 20 minute mark just to see if it’s baking the way you would like.
INGREDIENTS (+SUBSTITUTIONS)
Cannabutter: This recipe specifically works with butter, however I will be coming out with new recipes in the future that are vegan / dairy-free, such as cannabis coconut oil infused brownies and cannabis olive oil infused brownies. When it’s available, I’ll link it here.
Cocoa Powder: You can also use cacao powder which is a less processed version of cocoa powder. Also, keep in mind cacao powder won’t be as sweet as cocoa powder.
Sugar: I used white sugar for this recipe as it was meant to be a more classic brownie recipe, however you can also used zero sugar sweeteners like monkfruit or stevia.
Eggs: Substitute for flax egg as a vegan option.
TIPS & TRICKS FOR SUCCESS
For extra fudgy brownies, take out the brownies earlier than what the recipe calls for and let the residual heat do it’s job.
Pack the brownies in a sealed tight glass container and store for up to 1 week on the countertop, or up to 2 weeks in the refridgerator.
Be generous with the chocolate chip chunks! It’ll add a lovely texture to the brownies.

Cannabutter Brownies
Ingredients
- 225 grams semi-sweet chocolate chips or chunks
- 12 tbsps melted cannabis butter
- 3/4 cup white sugar
- 2 eggs
- 2 tsps vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp salt
Instructions
- Preheat the oven to 350F and line an 8" baking pan with parchment paper.
- Add half of the chocolate to a microwave safe bowl and melt the chocolate in 20 second increments until the chocolate is fully melted.
- In a large mixing bowl, whisk together the melted cannabis butter and sugar together until the mixture becomes fluffy and light in colour. You can use an electric whisk for this step.
- Pour in the melted chocolate (make sure its cooled a bit or else the eggs will cook) and mix well.
- Sift in the flour, cocoa powder and salt
- Gently fold the batter until the dry and wet ingredients are incorporated.
- Fold in the remaining chocolate.
- Transfer the batter into the baking pan.
- Bake for 20-22 minutes, depending on how fudgy you want the brownies to be.
- Allow to cool before cutting into even pieces.
